In response to a growing demand for the option of access to meat products that are not achieved through factory farming, there is interest in the concept of meat production from animal cell cultures versus animal slaughter. A technique of increasing interest currently is a scaffolding approach. The present version of this approach is expensive, not scalable and do not support the culturing of fat and muscle cells necessary to achieve marbling throughout the cultured muscle. Taking a different tack,Novel Farms, Inc. is structured around leveraging synthetic biology to develop cruelty-free, low cost and tunable 3D bioscaffolds for the production of structured cell-based meat products. The technology under development by principals of the firm is designed to improve the structure and marbling of cell-based meat but could represent a reduced cost option. The Novel Farms, Inc. approach is designed to enable the taste and texture of exquisite, marbled cultured meats while also transforming the option of cell-based meat consumption for the next generation of eaters .
